We all know that our bodies require the nutrients found in vegetables and fruits in order to function at their best, and juicing is an easy, convenient way to help ensure we are getting enough produce in our diet. To help you get started on your juicing journey, here is a list of vegetables you might want to consider adding to your homemade juices.
Carrots – Carrots are one of the most common ingredients in juicing recipes and are an inexpensive produce item that stores well. They add a bit of sweetness to juices, which makes them a nice addition to include with vegetables that some people find less appealing, such as spinach, kale or cabbage. Carrots contain vitamin A, which is essential for healthy eyes and is important for proper skin nutrition. Carrots also contain potassium, phosphorus, calcium, vitamin E, vitamin C, vitamin D and vitamin K. To juice carrots, you will need to peel them or scrub them with a vegetable brush to clean them.
Onions – Onions also store well and are usually inexpensive, making them an easy vegetable to include in juices. Because raw onion has a rather robust flavor, use only a small piece of peeled onion in your juice recipes. Onions contain potassium, magnesium, manganese, iron, calcium, zinc and small amounts of some B vitamins.
Ginger Root – Small chunks of peeled ginger root are a flavorful addition to vegetable juices. Ginger has been used for thousands of years as a natural remedy, most commonly for ailments like nausea and inflammation. It is also touted as a remedy for rheumatoid arthritis, urinary tract infections and symptoms of the common cold.
Celery – Celery stalks can be cleaned by scrubbing them with a vegetable brush and can be easily incorporated into a variety of vegetable juice recipes. This nutrient-rich food offers a variety of vitamins and minerals, including vitamin K, vitamin A, vitamin C, manganese, calcium, sodium, potassium, folate, magnesium and small amounts of some B vitamins.
Leafy Greens – Leafy green vegetables are packed with nutrients and make a great addition to vegetable juices and smoothies. Some lower-end extraction juicers have a difficult time juicing leafy greens, but this can often be remedied by running them through the juicer with solid vegetables, such as carrots or celery. There is a wide variety of leafy greens available, and the selection varies depending on where you live. Using kale as one example, you can find an array of nutrients in leafy greens, such as vitamin K, vitamin A, vitamin C, manganese, fiber, copper, calcium, potassium, iron, magnesium and vitamin E.
Garlic – Fresh garlic cloves store well for an extended period of time, and most people already have them in their kitchens for other cooking purposes. This makes garlic an easy vegetable to add to juice recipes. Because of its strong flavor, you will want to use only a small amount when juicing. To juice garlic, simply peel the clove and cut a chunk in the size you desire. Garlic contains manganese, vitamin B6, vitamin C, selenium, calcium, vitamin B1 and phosphorus.
Other vegetables that make delicious additions to juices include cucumbers, tomatoes and cabbage. For those who are not keen on the taste of vegetable juice, it is also possible to include fruits like apples or pears to give juices a sweeter flavor. To get the most health benefits from juicing, look for produce at local markets and farms. If it is available and not cost-prohibitive, it is also best to opt for organic produce whenever possible.
